G...This one brought back memories of my childhood. Grandma and grandpa always had a hog butchering day in November once colder weather set in. They had no electricity so the meat was either cured, salted down or canned. They used a sugar cure, but made their own. I think I have Mom's recipe around somewhere. Grandpa smoked the meats in the smokehouse (where else?). Grandma canned the sausages. I can remember they would strip out the loins and we would have them fried for breakfast the next morning. The most delicious things you every tasted. The men worked out side and the women gathered around the huge oak round, oil-cloth covered kitchen table and trimmed and cut. A grand time was had by all. I can't remember who all came but there were several adults. <br /><br />Part of the good flavor,of course, was the hogs were fed on home grown corn, waste milk and whey and foraging. I doubt they ever bought a bag of processed animal feed in their lives.<br /><br />I know we can't live like that today, but I try to get as close to it as I can!<br /><br />I love this post. You are a girl after my own heart.<br /><br />P.S. The last cured pork products I got from a local butcher/smokehouse, was so salty it was barely edible. I still have a 20 lb ham in the freezer - I think I will needs to simmer it in 50 changes of water before we can eat it.
