Easy Fish Cakes

Nothing much going on yet this morning & thankfully no kids last night, so I’ll just share an easy recipe with you.
1 can tuna, drained                 ¾ cup seasoned breadcrumbs
1 can salmon, drained            ½ tsp. garlic salt
½ cup diced onion                  3 eggs
½ cup diced celery

Flake & combine the tuna & salmon, then add remaining ingredients & mix thoroughly.  Shape into small patties & set aside.  Heat about ¼” of oil in a large pan & keep it at medium / high.  Place patties in pan & flip when bottoms are nicely browned.  Brown the other side & place on paper-towel lined plate to soak up some of the oil. 
You may only need two eggs for this recipe, but my eggs were small so I used three.  Start with two & if the mixture isn't sticking properly, just mix in the other egg.  Also, if you don't have seasoned breadcrumbs, just add some parsley, basil or oregano to flavor.  I'm not a fan of lemon with fish (I know, that's just wrong), but you could probably put a teaspoon of lemon juice in there with some dill instead of the garlic salt for a different taste.

  1. Well that is a twist on my regular salmon patties. I never thought of adding a can of tuna.
    I will try that next time.

  2. My "inspiration" was the fact that we had purchased a BUNCH of tuna when they were on sale and they got shoved to the back of the pantry...... then I re-discovered the stash. So I definately needed to start making more tuna-dishes. And the fact that the tuna is less expensive than the salmon. I tried an all-tuna patty before, but didn't care for it as much.

  3. Tonight we had your easy fish cakes, they were great and will have leftovers for two more nights.
    Wife asked what size the cans were? We used a small can of tuna and the typical can size of salmon which is about 4 times the size of the tuna and turned out terrific!

  4. The can of tuna was 5 oz (remember not long ago when they were SIX oz.?!?!) and the salmon was 14.5 oz.

  5. You had these fish patties and they sound wonderful. Many years ago, I was a lunch guest with someone who made salmon patties and served them with creamed peas on top. This was a new idea for me, but one that I have used since. I am curious what other people service with these, because there are some things that work better than others. Any sauces?

  6. The creamed peas sound great! Too bad DH totally hates peas (crazy guy). I didn't serve them with any sauce this time, although I have served them with a mayo/tartar sauce or a shrimp cocktail sauce before.
